Hi john. I think the fan should come on at 100c . It is controlled by a sensor in the thermostat housing.
I live in a part of the world where we often see temps well above 40c and I have fitted a 90c sensor so the fan comes on before things get too hot.
The temp gauge sensor is at the back of the right hand cylinder head so I think it can be reading a 100 and as it is not as hot at the front of the engine the fan may not come on till a bit higher reading is shown.
I have used a hand held temp gun to check that the fan is coming on when it should.
My car is Australian delivered and it came with a supplement to the instruction book saying that under extreme conditions that you may have to reduce speed to keep the temp with the limits.
